Vegan Black Bean & Lentil Chili
Yes, we said vegan. But try this!
Ingredients:
-black beans or chickpeas (garbanzo beans)
-olive oil
-1 diced red onion
-garlic minced
-2 tbsp of chili powder
-1tbsp of cumin
-1 tsp of sugar
-1 can of diced tomatoes
-1 cup of uncooked red lentils
-2 cans of tomato sauce
-2 cups of vegetable broth
-lime juice
-vegan sour cream
-cilantro
-fritos (optional)
Cooking Directions:
Heat olive oil in a large pot on medium heat, then add red onion and cook for 4-5 minutes.
Add your garlic, chili powder, cumin, and sugar. Then add your tomatoes, black beans, lentils and some salt and pepper.
After stirring for a minute or two, add your tomato sauce and the vegetable broth.
Cover the pot and put to medium-high heat until it starts to simmer. Then reduce the heat and let it simmer at medium-low for 5-7 minutes or until your lentil are tender.
Stir in lime juice and add any preferred seasonings.
Serve with vegan sour cream, cilantro, and your favorite chili toppings!
